  • Onion powder1 teaspoon
  • Cayenne pepper1/2 teaspoon
  • Vegetable oil4 cups
  • Waffles6
  • To taste Maple syrup
  • To taste Butter

Method

In a large bowl, combine sweet tea, salt, and pepper. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, or preferably overnight.

In a shallow dish, pour buttermilk. In another shallow dish, combine flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

Remove chicken from brine and pat dry with paper towels.

Dredge each chicken thigh in the flour mixture, then dip in buttermilk, and dredge again in the flour mixture, pressing to adhere.

Heat vegetable oil in a large, heavy-bottomed skillet over medium-high heat until it reaches 350°F (175°C).

Carefully place chicken thighs in the hot oil, being careful not to overcrowd the pan. Fry for 6-8 minutes per side, or until golden brown and cooked through.

Remove chicken from skillet and place on a wire rack to drain excess oil.

Serve immediately on top of warm waffles with butter and maple syrup.
