- Fresh Blood Oranges (Sanguinello preferred)4 medium
- sprigs Fresh Rosemary2
- Granulated Sugar1/2 cup
- Water1/2 cup
- bottle (750ml) Top-Tier Soda Water1
- Ice Cubes

First, make the rosemary simple syrup: In a small saucepan, combine the sugar and water. Add one sprig of rosemary. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat and let steep for 30 minutes to infuse the rosemary flavor. Remove the rosemary sprig.
Juice the blood oranges. You should have about 1 cup of juice.
Char the remaining rosemary sprig lightly with a kitchen torch or over a gas flame. This will enhance its aroma.
Fill glasses with ice. Add 2-3 tablespoons of rosemary simple syrup to each glass (adjust to taste).
Pour about 1/4 cup of fresh blood orange juice into each glass.
Top with soda water, leaving a little room at the top.
Garnish with the charred rosemary sprig and a blood orange slice (optional).
Stir gently and serve immediately.
