- Scallions2
- Soy Sauce1 tablespoon

- White Pepper1/4 teaspoon
- to taste Salt

Rinse the rice thoroughly under cold water.
In a large pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5 - 2 hours, or until the rice has broken down and the congee has reached your desired consistency, stirring occasionally to prevent sticking.
While the congee is simmering, prepare the toppings. Peel and dice the century egg into small pieces.
If using pork, marinate it with a little soy sauce and sesame oil.
Grate or finely mince the ginger.
Thinly slice the scallions.
About 30 minutes before the congee is ready, add the marinated pork (if using) and ginger to the pot. Stir well.
Once the congee is cooked, stir in the soy sauce, sesame oil, and white pepper. Season with salt to taste.
Ladle the congee into bowls and top with the diced century egg and sliced scallions. Serve hot.
