Preheat your oven to 350°F (175°C).
Make the caramel: In a heavy-bottomed saucepan, combine the sugar and water. Cook over medium heat, without stirring, until the sugar melts and turns a deep amber color. This will take about 5-7 minutes. Watch carefully to prevent burning!
Pour the caramel immediately into a 6-inch round cake pan or ramekins, swirling to coat the bottom evenly. Set aside.
In a blender, combine the condensed milk, coconut milk, and eggs. Blend until smooth.
Pour the coconut mixture over the caramel in the pan.
Place the pan in a larger baking dish. Pour hot water into the larger dish to come halfway up the sides of the flan pan (this creates a water bath).
Bake for 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
Remove from the oven and let cool completely in the water bath.
Once cooled, refrigerate for at least 4 hours, or preferably overnight.
To unmold, run a thin knife around the edge of the flan. Invert onto a serving plate. The caramel will drizzle over the flan. Serve and enjoy!
