- Full-fat milk4 cups
- Heavy cream1/2 cup
- Sugar3/4 cup
- Saffron strands1/4 teaspoon
- pods Green cardamom pods4
- Ghee (clarified butter)1/4 cup
- Almonds, slivered2 tablespoons
- Pistachios, chopped2 tablespoons
- Rose water1 teaspoon
- as needed Vegetable oil

Prepare the Rabri: In a heavy-bottomed pan, combine milk and heavy cream. Crush the cardamom pods lightly and add them to the milk mixture. Add saffron strands.
Simmer over medium-low heat, stirring frequently to prevent scorching, until the milk reduces to about one-third of its original volume. This will take approximately 1-1.5 hours. The mixture should thicken to a creamy consistency.
Add sugar and rose water to the rabri. Stir well until the sugar is dissolved. Remove from heat and let it cool completely.
Prepare the Brioche: Cut the brioche slices into triangles or desired shapes.
Heat ghee and vegetable oil in a frying pan over medium heat.
Fry the brioche slices until golden brown on both sides. Drain on paper towels to remove excess oil.
Assemble the Shahi Tukra: Dip the fried brioche slices into the cooled rabri, ensuring they are well soaked. Arrange the soaked brioche on a serving platter.
Garnish with slivered almonds and chopped pistachios.
Serve chilled or at room temperature. Enjoy this royal treat!
