Preheat oven broiler to high.
Prepare the pistachio crust: In a food processor, pulse pistachios and panko breadcrumbs until finely ground. Transfer to a shallow dish.
Season salmon fillets with salt and pepper. Dredge each fillet in the pistachio mixture, pressing gently to adhere.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear salmon fillets for 3-4 minutes per side, until golden brown.
In a small bowl, whisk together honey and Dijon mustard.
Brush the honey-Dijon glaze over the salmon fillets.
Transfer the skillet to the preheated broiler and broil for 2-3 minutes, or until the glaze is caramelized and the salmon is cooked through.
While the salmon is broiling, prepare the arugula salad: In a bowl, toss arugula with cherry tomatoes, shaved parmesan, a squeeze of lemon juice, and a drizzle of olive oil.
Serve the pistachio-crusted salmon over a bed of lemon arugula salad. Garnish with extra chopped pistachios, if desired.
