Preheat your oven to 375°F (190°C).
In a 9x13 inch baking dish, combine the uncooked rice, chicken broth, chopped onion, minced garlic, olive oil, salt, black pepper, smoked paprika, and dried oregano. Stir well to combine.
Pat the chicken thighs dry and nestle them into the rice mixture. Make sure the chicken is mostly submerged in the liquid.
Scatter the frozen mixed vegetables evenly over the rice and around the chicken.
Cover the baking dish tightly with aluminum foil.
Bake for 30 minutes. After 30 minutes, remove the foil and continue baking for another 10-15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 74°C) and the rice is tender and has absorbed most of the liquid.
Carefully remove the dish from the oven. Let it rest, uncovered, for 5-10 minutes before serving. This allows the rice to finish absorbing any remaining liquid and the flavors to meld.
Garnish with fresh chopped parsley, if desired, and serve hot.
