- Water2 tablespoons

Wash the dandelion greens thoroughly, removing any tough stems. Roughly chop the greens.
Thinly slice the leeks, using only the white and light green parts. Wash the sliced leeks well to remove any dirt.
Mince the garlic cloves.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced leeks and cook, stirring occasionally, until they are softened and caramelized, about 15-20 minutes. Add a tablespoon of water if they start to stick.
While the leeks are caramelizing, heat the remaining 1 tablespoon of olive oil in a separate small skillet over medium heat. Add the minced garlic and cook, stirring constantly, until golden brown and crispy, about 1-2 minutes. Be careful not to burn the garlic.
Add the chopped dandelion greens to the skillet with the caramelized leeks. Stir to combine and cook until the greens are wilted and tender, about 5-7 minutes. Add another tablespoon of water if needed.
Stir in the lemon juice, salt, and pepper. Taste and adjust seasonings as needed.
Transfer the Hindbeh to a serving dish and top with the crispy garlic. Serve immediately.
