Method

In a large skillet or wok, heat vegetable oil over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned.

Add diced onion and minced garlic to the skillet and cook for 2-3 minutes, until softened.

Stir in shredded cabbage, shredded carrots, soy sauce, sesame oil, ground ginger, salt, and pepper. Cook for 5-7 minutes, or until the cabbage is tender-crisp.

Remove the skillet from the heat and let the filling cool slightly.

In a small bowl, whisk the egg with 1 tablespoon of water to create an egg wash.

Lay an egg roll wrapper on a flat surface with one point facing you. Place about 1/4 cup of the pork and vegetable filling in the center of the wrapper.

Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll the egg roll tightly to the top corner. Brush the top corner with egg wash to seal.

Repeat with the remaining wrappers and filling.

Preheat your air fryer to 375°F (190°C).

Place the egg rolls in the air fryer basket in a single layer, being careful not to overcrowd. You may need to cook them in batches.

Spray the egg rolls lightly with cooking oil spray.

Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
