- Honey1/4 cup
- Vegetable oil1/4 cup

Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
In a separate bowl, whisk together eggs, dairy-free milk, honey, and vegetable oil.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Fill each muffin cup about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
