Method

1

Preheat your oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan or a baking sheet.

2

In a large bowl, combine the ground beef, breadcrumbs, egg, chopped onion, 1/4 cup of ketchup, Worcestershire sauce, Dijon mustard, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix gently with your hands until just combined, being careful not to overmix.

3

Form the mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet.

4

In a small bowl, mix the remaining 1/4 cup of ketchup. Spread this glaze evenly over the top of the meatloaf.

5

Bake for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C). Let the meatloaf rest for 10 minutes before slicing.

6

While the meatloaf bakes, prepare the mashed potatoes. Peel the potatoes and cut them into 1-inch chunks.

7

Place the potato chunks in a large pot and cover with cold water by about an inch. Add 1 teaspoon of salt to the water. Bring to a boil over high heat, then reduce heat to medium and simmer until the potatoes are very tender, about 15-20 minutes.

8

Drain the potatoes thoroughly. Return them to the hot pot over low heat for a minute or two to dry out any excess moisture.

9

Add the butter and milk to the potatoes. Mash with a potato masher or a fork until smooth and creamy. Season with 1 teaspoon of salt and 1/4 teaspoon of black pepper, or to taste.

10

Slice the rested meatloaf and serve immediately with the creamy mashed potatoes.
