  • English cucumber, thinly sliced or julienned1/2
  • Fresh mint leaves, chopped1/4 cup
  • Red bell pepper, thinly sliced1/2
  • Carrot, shredded or julienned1 medium
  • Red onion, thinly sliced1/4 small
  • Fresh cilantro, chopped1/4 cup
  • Mixed greens or shredded cabbage4 cups
  • Chopped peanuts (for garnish)2 tbsp

If your chicken isn't pre-cooked, season the chicken breast with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then shred or dice it.

In a large bowl, combine the shredded chicken, sliced cucumber, chopped mint, sliced red bell pepper, shredded carrot, and sliced red onion.
