- Olive oil (for topping)1/4 cup

In a large bowl, whisk together the flour, yeast, sugar, and salt.
Add the warm water and 1/4 cup olive oil to the dry ingredients. Mix until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Alternatively, use a stand mixer with a dough hook.
Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Preheat oven to 450°F (232°C).
Punch down the dough and divide it into 6-8 equal pieces.
On a lightly floured surface, roll each piece of dough into a thin circle, about 6-8 inches in diameter.
In a small bowl, combine the za'atar with the 1/4 cup olive oil to form a paste.
Spread the za'atar mixture evenly over each flatbread.
Place the flatbreads on baking sheets lined with parchment paper.
Bake for 8-10 minutes, or until the edges are golden brown and the bottom is crisp.
Drizzle with extra olive oil, if desired, and serve warm.
