  • Ginger-Garlic Paste1 tablespoon
  • Pav Bhaji Masala2 tablespoons
  • Turmeric Powder1/2 teaspoon
  • Red Chili Powder1 teaspoon
  • Cumin Powder1/2 teaspoon
  • Coriander Powder1 teaspoon
  • Lemon Juice1 tablespoon
  • Butter2 tablespoons
  • Cilantro2 tablespoons
  • Oil2 tablespoons
  • to taste Salt
  • Water1/2 cup

Prepare the vegetables: Chop the onions, tomatoes, and bell pepper. Boil or steam the mixed vegetables until tender.

Sauté the aromatics: Heat oil in a large pan or skillet. Add the chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for another minute until fragrant.

Cook the tomatoes and spices: Add the chopped tomatoes and cook until they soften. Add turmeric powder, red chili powder, cumin powder, coriander powder, and Pav Bhaji masala. Sauté for 2-3 minutes until the spices are well combined.

Mash the vegetables: Add the boiled/steamed mixed vegetables to the pan. Mash the vegetables using a potato masher or a large spoon until they are partially mashed but still have some texture.

Simmer the bhaji: Add water to adjust the consistency. Bring the bhaji to a simmer and cook for 5-7 minutes, allowing the flavors to meld together. Add salt to taste and lemon juice.

Toast the pav: While the bhaji is simmering, heat butter on a griddle or pan. Slice the pav horizontally and toast them in the butter until golden brown on both sides.

Serve: Garnish the bhaji with fresh cilantro and a dollop of butter. Serve hot with the toasted pav. Enjoy!
