Preheat your oven to 350°F (175°C).
Prepare the caramel: In a saucepan, combine the sugar and water. Cook over medium heat, stirring until the sugar dissolves. Then, stop stirring and let it simmer until it turns a deep amber color. Be careful not to burn it!
Pour the caramel into a heatproof dish or individual ramekins, coating the bottom evenly. Let it cool and harden.
In a bowl, whisk together the egg yolks and vanilla extract until well combined and slightly pale.
Gently pour the egg yolk mixture over the hardened caramel in the dish.
Place the dish in a larger baking pan. Add hot water to the larger pan, creating a water bath that comes halfway up the sides of the dish containing the custard.
Bake in the preheated oven for 45-55 minutes, or until the custard is set but still slightly wobbly in the center.
Remove from the oven and let it cool completely in the water bath.
Once cooled, refrigerate for at least 4 hours, or preferably overnight.
To serve, run a thin knife around the edges of the custard to loosen it. Invert it onto a serving plate, allowing the caramel to drizzle over the top.
