  • Peanut Butter1/2 cup
  • Coconut Milk1/2 cup
  • Honey1 tbsp
  • Rice Vinegar1 tbsp
  • Soy Sauce1 tbsp
  • Lime Juice1 tbsp
  • 2-4 tbsp Water
  • Vegetable Oil2 tbsp
  • to taste Salt
  • to taste Pepper

Method

Cut the chicken thighs into thin strips, about 1/2 inch thick.

In a bowl, whisk together soy sauce, fish sauce, lime juice, brown sugar, minced garlic, grated ginger, turmeric powder, cumin, coriander, and red pepper flakes.

Add the chicken strips to the marinade and toss to coat well. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

While the chicken marinates, prepare the peanut sauce. In a saucepan, combine peanut butter, coconut milk, honey, rice vinegar, soy sauce, and lime juice.

Heat over medium-low heat, stirring constantly, until the sauce is smooth and creamy. Add water, 1 tablespoon at a time, to reach your desired consistency.

Preheat your grill to medium heat. Thread the marinated chicken strips onto skewers.

Lightly oil the grill grates. Grill the chicken skewers for 3-4 minutes per side, or until cooked through and slightly charred.

Serve the chicken satay hot, with the peanut sauce for dipping. Garnish with chopped peanuts and cilantro, if desired.
