- Lime1

- Black pepper1/4 teaspoon

Preheat oven to 400°F (200°C).
Lightly coat the corn on the cob with olive oil, salt, and pepper.
Roast the corn in the preheated oven for 20-25 minutes, turning halfway through, until kernels are tender and slightly browned.
While the corn is roasting, roast the green chiles directly on the gas burner or under the broiler until the skin is blackened. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off the skin, remove seeds, and chop.
Once the corn is cool enough to handle, carefully shave the kernels off the cob.
In a large bowl, combine the shaved corn, chopped roasted green chiles, Mexican crema, lime juice, chili powder, salt, and pepper.
Toss everything together until well combined.
Serve immediately in bowls. Garnish with extra chili powder or a lime wedge, if desired.
