Whisk eggs, milk, salt, and pepper together in a bowl until well combined.
Heat olive oil in a non-stick skillet over medium heat.
Add spinach to the skillet and cook until wilted, about 1-2 minutes.
Pour the egg mixture over the spinach in the skillet.
