  • Chia Seeds1/4 cup
  • (13.5 oz) Full-Fat Coconut Milk1 can
  • 1-2 teaspoons Ceremonial Grade Matcha Powder
  • 1-2 tablespoons Maple Syrup or Honey
  • Vanilla Extract1/2 teaspoon
  • Pinch of Salt1/8 teaspoon
  • Toasted Coconut Flakes2 tablespoons
  • Fresh Berries1/2 cup

Method

In a medium bowl, whisk together the coconut milk, maple syrup (or honey), vanilla extract, and salt.

Divide the mixture in half. In one half, whisk in the matcha powder until completely dissolved and smooth. Taste and add more matcha if desired.

In separate bowls, add half of the coconut milk mixture to each bowl. Stir well to combine.

Add the chia seeds to each bowl, stirring well to ensure they are evenly distributed. Let sit for 5 minutes, then stir again to break up any clumps.

Cover both bowls and refrigerate for at least 2 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.

Once the pudding has set, layer the matcha chia pudding and the plain coconut chia pudding in glasses or jars. Alternate layers for a visually appealing effect.
