  • Heavy cream1 cup
  • Lingonberry jam2 tablespoons
  • Powdered sugar1 tablespoon

Method

Preheat your Krumkake iron according to the manufacturer's instructions.

In a bowl, whisk together the flour, sugar, cardamom, and a pinch of salt.

In a separate bowl, whisk the melted butter, eggs, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Spoon a tablespoon of batter onto the hot Krumkake iron. Close the iron and bake for 1-2 minutes, or until golden brown.

Quickly remove the Krumkake from the iron and roll it around a wooden cone to form a cone shape. Work quickly, as the cookie will harden fast.

Let the Krumkake cool completely on the cone before removing it.

While the Krumkake cools, prepare the lingonberry whipped cream. In a chilled bowl, whip the heavy cream with an electric mixer until soft peaks form.

Add the lingonberry jam and powdered sugar (if using) and continue to whip until stiff peaks form.

Fill each Krumkake cone with the lingonberry whipped cream just before serving.
