Method

In a large pot or Dutch oven, combine the chicken carcass, carrots, celery, onion, garlic, bay leaves, thyme, salt, pepper, and 8 cups of water. Bring to a boil, then reduce heat and simmer for at least 1 hour to create a rich broth. The longer it simmers, the more flavorful it will be.

Remove the chicken carcass from the pot and strain the broth through a fine-mesh sieve. Discard the solids.

Return the strained broth to the pot. Add the chicken thighs and simmer until cooked through, about 20-25 minutes. Remove the chicken thighs and shred the meat. Discard the skin and bones.

Add the shredded chicken back to the pot with the broth. Bring to a simmer.

Add the zucchini noodles to the soup and cook until tender-crisp, about 3-5 minutes. Be careful not to overcook them.

Stir in red pepper flakes if desired.

Taste and adjust seasoning as needed. Serve hot and enjoy!
