  • Bourbon1/4 cup
  • Honey1/4 cup
  • Soy sauce2 tbsp
  • Rice vinegar1 tbsp
  • Cauliflower rice4 cups
  • Unsweetened almond milk1/2 cup
  • Nutmeg1/4 tsp
  • Parmesan cheese, grated (optional)1/4 cup

Method

Preheat oven to 400°F (200°C).

In a large bowl, combine ground turkey, panko breadcrumbs, egg, chopped onion, minced garlic, salt, and pepper. Mix well with your hands until just combined.

To prepare the cauliflower grits, heat olive oil in a large skillet over medium heat.

Add cauliflower rice and cook for 5-7 minutes, or until softened.

Stir in almond milk and nutmeg. Simmer for another 3-5 minutes, or until the cauliflower grits have reached your desired consistency.

Season with salt and pepper to taste. Stir in parmesan cheese if desired.
