Ingredients
- Beef chuck1.5 lbs
- medium, cubed Sweet potatoes2
- medium, chopped Onion1
- cloves, minced Garlic4
- inch piece, grated Ginger1
- cup, smooth Peanut butter1
- can Diced tomatoes28 oz
- Tomato paste2 tablespoons
- Beef broth4 cups
- Vegetable oil2 tablespoons
- Ground cumin1 teaspoon
- Ground coriander1 teaspoon
- Smoked paprika1/2 teaspoon
- (optional) Cayenne pepper1/4 teaspoon
- teaspoon, or to taste Salt1
- teaspoon, or to taste Black pepper1/2
- As needed cooked, for serving Rice

Cut the beef chuck into 1-inch cubes.
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes in batches, then remove and set aside.
Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.
Stir in the tomato paste, cumin, coriander, smoked paprika, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
Pour in the diced tomatoes and beef broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
Return the browned beef to the pot. Add the cubed sweet potatoes.
Stir in the peanut butter until it is fully dissolved into the stew.
Season with salt and pepper to taste.
Cover the pot and reduce the heat to low. Simmer for at least 2 hours, or until the beef is very tender. Stir occasionally to prevent sticking.
Serve hot over cooked rice. Enjoy!
