- whole, ripe but firm Peaches4
- Dulce de Leche repostero1/2 cup
- Mascarpone cheese1/2 cup
- Olive oil1 tablespoon
- pinch Salt

Preheat your grill to medium heat.
Halve the peaches and remove the pits.
Lightly brush the cut sides of the peaches with olive oil and sprinkle with a pinch of salt.
Place the peaches cut-side down on the grill grates.
Grill for 5-7 minutes, or until grill marks appear and the peaches are slightly softened and caramelized.
Remove the peaches from the grill and let them cool slightly.
Place the grilled peaches on a serving plate.
Fill the center of each peach half with a dollop of dulce de leche.
Top with a quenelle (or spoonful) of mascarpone cheese.
Serve immediately and enjoy!
