Preheat your grill to medium heat. Lightly oil the grates to prevent sticking.
Halve the peaches and remove the pits. Brush the cut sides with a little oil.
Place the peaches cut-side down on the grill and cook for 5-7 minutes, or until grill marks appear and the peaches are slightly softened. Remove from grill and set aside.

While the cobbler is baking, prepare the bourbon cream: In a chilled bowl, whip the heavy cream with an electric mixer until soft peaks form.
Add the powdered sugar, bourbon, and vanilla extract. Continue whipping until stiff peaks form.
Let the cobbler cool slightly before serving. Top each serving with a dollop of bourbon cream.
