Ingredients

  • Dried Pinto Beans1 lb
  • Smoked Ham Hock1 large
  • Yellow Onion1 medium
  • Garlic3 cloves
  • Chicken Broth6 cups
  • Dried Oregano1 tsp
  • Cumin1 tsp
  • Salt1 tsp
  • Black Pepper1/2 tsp
  • Olive Oil1 tbsp

Method

Rinse the pinto beans thoroughly in a colander and remove any debris.

Dice the onion and mince the garlic.

Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Transfer the rinsed beans, sautéed onion and garlic, ham hock, chicken broth, oregano, cumin, salt, and pepper to your slow cooker.

Cook on low for 6-8 hours, or on high for 3-4 hours, or until the beans are tender and the ham is falling off the bone.

Remove the ham hock from the slow cooker. Shred the ham and return it to the slow cooker. Stir to combine.

Taste and adjust seasonings as needed. If the broth is not thick enough, you can mash some of the beans against the side of the slow cooker to thicken it.
