Ingredients

  • 3-4 lbs Pork shoulder (Boston butt)
  • Orange1
  • Lime1
  • Onion1
  • Garlic4 cloves
  • Chipotle peppers in adobo sauce2
  • Dried oregano1 tsp
  • Ground cumin1 tsp
  • Salt2 tsp
  • Black pepper1/2 tsp
  • 12-16 Corn tortillas
  • White onion1/2
  • bunch Fresh cilantro1/4
  • Vegetable oil2 tbsp

Method

Cut the pork shoulder into 2-3 inch chunks.

In a slow cooker, combine the pork, juice of one orange and one lime, quartered onion, minced garlic, chopped chipotle peppers (with adobo sauce), oregano, cumin, salt, and pepper.

Cook on low for 6-8 hours, or on high for 3-4 hours, until the pork is very tender and easily shreds.

Remove the pork from the slow cooker and shred it with two forks. Discard any large pieces of fat.

Heat vegetable oil in a large skillet over medium-high heat.

Add the shredded pork to the skillet and cook, stirring occasionally, until the edges are crispy and browned (about 5-7 minutes).

Warm the corn tortillas.

Serve the carnitas on warm tortillas, topped with chopped white onion and fresh cilantro.
