  • Chicken broth2 cups
  • 12-oz can, diced Green chiles1
  • Sour cream1/2 cup
  • medium, chopped Onion1/2
  • cloves, minced Garlic2
  • Olive oil1 tablespoon
  • Salt1/2 teaspoon
  • Black pepper1/4 teaspoon

Method

Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.

In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Gradually whisk in chicken broth until smooth. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally, until slightly thickened.

Stir in diced green chiles and sour cream. Season with salt and pepper. Remove from heat.

In a skillet, heat olive oil over medium heat. Sauté onion and garlic until softened, about 5 minutes.

In a bowl, combine shredded rotisserie chicken, sautéed onion and garlic, and 1 cup of shredded Monterey Jack cheese.

Warm tortillas slightly (microwave for 30 seconds or heat in a dry skillet).

Fill each tortilla with the chicken mixture and roll up tightly. Place seam-side down in the prepared baking dish.

Pour green chile sauce evenly over the enchiladas. Top with the remaining 1 cup of Monterey Jack cheese.

Bake for 20-25 minutes, or until cheese is melted and bubbly and the sauce is heated through.

Let cool slightly before serving. Garnish with extra sour cream or cilantro, if desired.
