  • Yellow mustard1 tsp
  • Sweet pickle relish1 tbsp
  • Onion powder1/2 tsp
  • Garlic powder1/2 tsp
  • Paprika1/4 tsp
  • Salt1/2 tsp
  • Black pepper1/4 tsp
  • Olive oil1 tbsp

Method

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large skillet, heat olive oil over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.

Stir in onion powder, garlic powder, paprika, salt, and pepper. Mix well.

Chop pickles into small pieces. Shred cheddar cheese.

To assemble the empanadas, lay out the empanada dough circles. Place a spoonful of seasoned ground beef in the center of each circle. Top with shredded cheddar cheese and chopped pickles.

Fold the empanada dough over to form a half-moon shape. Crimp the edges with a fork to seal.

Place the empanadas on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown.

While the empanadas are baking, prepare the special sauce. In a small bowl, combine mayonnaise, ketchup, yellow mustard, and sweet pickle relish. Stir well.
