  • stalks, diced Celery2
  • cloves, minced Garlic2
  • Chicken Broth8 cups
  • Dried Thyme1 teaspoon
  • Bay Leaf1
  • Olive Oil1 tablespoon
  • to taste Salt
  • to taste Black Pepper

Rinse the dried beans thoroughly and soak them in a large pot with water overnight, or for at least 8 hours. Drain and rinse again.

In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion, carrots, and celery and cook until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Add the drained beans, ham hock, diced ham, chicken broth, dried thyme, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer for at least 2-3 hours, or until the beans are tender. Stir occasionally to prevent sticking.

Remove the ham hock from the pot. Let it cool slightly, then shred the meat and return it to the soup. Discard the skin and bone.

Season the soup with salt and pepper to taste. Simmer for another 15 minutes to allow the flavors to meld.

Remove the bay leaf before serving. Serve hot with crusty bread, if desired.
