Ingredients
- All-purpose flour2 1/2 cups
- Baking powder1 tablespoon
- Baking soda1/2 teaspoon
- Salt1 teaspoon
- Cold unsalted butter1/2 cup
- Västerbottensost cheese4 ounces
- Fresh chives2 tablespoons
- Buttermilk1 cup
- Melted butter2 tablespoons

Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry blender or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
Grate the Västerbottensost cheese and chop the fresh chives. Add them to the flour mixture and gently toss to combine.
Pour in the buttermilk and stir until just combined. Be careful not to overmix.
Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick rectangle.
Fold the dough in thirds, like a letter. Rotate the dough 90 degrees and pat it into a 1-inch thick rectangle again. Repeat this folding process 2-3 more times to create flaky layers.
Using a 2-inch biscuit cutter, cut out biscuits from the dough. Place them on the prepared baking sheet.
Brush the tops of the biscuits with melted butter.
Bake for 12-15 minutes, or until golden brown.
Let the biscuits cool slightly before serving. Enjoy warm!
