Ingredients
- Mascarpone cheese16 oz
- Cream cheese8 oz
- Heavy cream1 cup
- Granulated sugar1 cup
- Eggs3
- Vanilla extract1 tsp
- Espresso1/2 cup
- package Ladyfingers1
- Cocoa powder2 tbsp
- Coffee liqueur (optional)2 tbsp
- Butter2 tbsp
- All-purpose flour2 tbsp

Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
In a large bowl, beat together mascarpone cheese, cream cheese, and sugar until smooth and creamy.
Beat in eggs one at a time, then stir in vanilla extract.
In a separate bowl, whisk together heavy cream and flour until smooth. Gently fold into the cheese mixture.
In a shallow dish, combine espresso and coffee liqueur (if using). Quickly dip each ladyfinger into the coffee mixture and arrange them on the bottom of the prepared pan.
Pour the cheesecake batter over the ladyfingers.
Bake for 55-65 minutes, or until the edges are set but the center still has a slight wobble.
Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. This prevents cracking.
Remove from the oven and let cool completely at room temperature. Then, refrigerate for at least 4 hours, or preferably overnight.
Before serving, dust the top of the cheesecake generously with cocoa powder. Release from the springform pan and slice.
