Roasted Lemon-Herb Cod with Cherry Tomatoes, Garlic, Asparagus, & Couscous

You can’t beat our lemon herb cod for a simple, sophisticated dinner that’s ready in under 30 minutes. Light and flavorful, the seasoned cod is roasted alongside cherry tomatoes, then served over couscous with asparagus, roasted separately with fresh garlic.

Ingredients

  • cod fillets (approximately 6 ounces each)2
  • olive oil½ tablespoon
  • lemon (zest and juice)½
  • kosher salt1 pinch
  • ground black pepper1 pinch
  • paprika⅛ teaspoon
  • garlic powder⅛ teaspoon
  • cherry tomatoes1 cup
  • bunch asparagus, trimmed½
  • garlic, smashed3 cloves
  • olive oil1 ½ tablespoon
  • kosher salt1/8 teaspoon
  • ground black pepper1/8 teaspoon
  • dry pearled couscous1 cup

Method

Preheat oven to 400°F.

Cook couscous according to package directions. Keep warm.

Toss asparagus with garlic, olive oil, salt and pepper in a medium baking dish. Put the asparagus in first for 5 minutes.

Season the cod with olive oil, lemon juice, spices, salt and pepper. In a separate large baking dish, add the cherry tomatoes and the cod.

Place the dish in the oven and cook for 12-15 minutes or until the cod is fully cooked, cherry tomatoes are bursting, and asparagus is tender.

Serve.
