Ingredients
- Quinoa1 cup
- Chicken breast or shrimp1 pound
- Red bell pepper1
- Yellow bell pepper1
- Green onions4
- Ginger1 tablespoon
- Soy sauce3 tablespoons
- Sesame oil1 tablespoon
- Eggs2
- Garlic2 cloves
- Vegetable oil2 tablespoons
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon

Cook the quinoa according to package directions. Set aside.
If using chicken, cut into small bite-sized pieces. If using shrimp, ensure it's peeled and deveined.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Scramble the eggs until cooked through. Remove from the skillet and set aside.
Add the remaining vegetable oil to the skillet. Add the chicken or shrimp and cook until fully cooked. Remove from the skillet and set aside.
Add the diced bell peppers and minced garlic to the skillet. Cook until the peppers are slightly softened, about 5 minutes.
Add the cooked quinoa, cooked chicken or shrimp, and scrambled eggs back to the skillet.
Stir in the soy sauce, sesame oil, grated ginger, salt, and pepper. Mix well to combine all ingredients.
Cook for another 2-3 minutes, stirring constantly, until everything is heated through and the flavors have melded.
Garnish with chopped green onions before serving.
Serve hot and enjoy!
