Pat the pork chops dry with paper towels and season generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 3-4 minutes per side, until golden brown. Remove from skillet and set aside.
Add butter to the skillet. Add sliced onions and cook over medium heat, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.
Add sliced apples to the skillet with the onions. Sprinkle with brown sugar and dried thyme. Cook, stirring occasionally, until the apples are tender and slightly caramelized, about 5-7 minutes.
Stir in Dijon mustard and apple cider vinegar, scraping up any browned bits from the bottom of the skillet.
Return the pork chops to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the pork chops are cooked through and the apples and onions are tender.
Serve the pork chops with the caramelized apples and onions spooned over the top. Enjoy!
