Ingredients

  • Mashed potatoes1 cup
  • All-purpose flour2 1/2 cups
  • Granulated sugar1/2 cup
  • Active dry yeast2 1/4 teaspoons
  • Warm milk1/2 cup
  • egg1 Large
  • Melted butter2 tablespoons
  • Salt1/2 teaspoon
  • Vegetable oil4 cups
  • Powdered sugar1 cup
  • Ground cinnamon1 teaspoon

Method

In a large bowl, dissolve yeast in warm milk. Let stand for 5 minutes until foamy.

Add mashed potatoes, sugar, egg, melted butter, and salt to the yeast mixture. Mix well.

Gradually add flour, mixing until a soft dough forms. Turn dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.

Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Punch down the dough and turn it out onto a lightly floured surface. Roll out to about 1/2-inch thickness.

Use a doughnut cutter or two different-sized round cutters to cut out doughnuts.

Place doughnuts on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

Heat vegetable oil in a large pot or deep fryer to 350°F (175°C).

Carefully drop doughnuts into the hot oil, a few at a time. Fry for 2-3 minutes per side, or until golden brown.

Remove doughnuts with a slotted spoon and place on a wire rack to drain.

In a small bowl, combine powdered sugar and cinnamon. While doughnuts are still warm, toss them in the powdered sugar mixture to coat.
