Method

1

Prepare the Mango Salsa: Peel and dice the mango. In a medium bowl, combine the diced mango, finely diced red onion, chopped cilantro, and the juice of half a lime. Stir gently to combine. Season with a pinch of salt if desired. Set aside.

2

Season the Shrimp: Pat the shrimp dry with paper towels. In a bowl, toss the shrimp with 1 tablespoon of olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper until evenly coated.

3

Cook the Shrimp: Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp in a single layer and cook for 2-3 minutes per side, or until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.

4

Warm the Tortillas: While the shrimp cooks, warm the tortillas. You can do this by heating them in a dry skillet over medium heat for 30 seconds per side, wrapping them in a damp paper towel and microwaving for 30-60 seconds, or wrapping them in foil and heating in a 350°F (175°C) oven for 5-7 minutes.

5

Assemble the Tacos: To assemble, place a spoonful of shredded cabbage on each warm tortilla. Top with a generous portion of cooked shrimp, a spoonful of the fresh mango salsa, and a few slices or cubes of avocado. Drizzle with a squeeze of fresh lime juice and a dollop of sour cream or Greek yogurt, if using.

6

Serve immediately and enjoy your mild shrimp tacos!
