Peel the yuca and cut into fry-shaped sticks.
Boil the yuca fries in salted water for about 15-20 minutes, or until slightly tender. Drain well.
While yuca is boiling, cook bacon until crispy. Crumble and set aside.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Fry the yuca sticks in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
Season the fried yuca with salt and pepper.
Arrange the yuca fries on a baking sheet. Sprinkle with shredded cheddar cheese and crumbled bacon.
Broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.
Garnish with chopped scallions and serve immediately.
