Ingredients
- Dried black beans1 pound

- medium, chopped Red bell pepper1
- medium, chopped Green bell pepper1
- cloves, minced Garlic4
- Olive oil2 tablespoons
- Cumin1 tablespoon
- Oregano1 teaspoon
- Chili powder1/2 teaspoon
- Bay leaf1
- Vegetable broth6 cups
- Dry sherry2 tablespoons
- teaspoon, or to taste Salt1
- teaspoon, or to taste Black pepper1/2

Rinse the black beans in a colander.
Set the Instant Pot to 'Saute' mode. Add olive oil, chopped onion, and bell peppers. Cook until softened, about 5-7 minutes.
Add minced garlic, cumin, oregano, and chili powder. Cook for another minute until fragrant.
Add the rinsed black beans, vegetable broth, bay leaf, salt, and pepper to the Instant Pot. Stir well.
Secure the lid and set the Instant Pot to 'Pressure Cook' or 'Manual' mode for 30 minutes on high pressure.
Allow for a natural pressure release for 15 minutes, then manually release any remaining pressure.
Remove the bay leaf. Use an immersion blender to partially blend the soup to your desired consistency. Alternatively, you can remove about 2 cups of soup and blend it in a regular blender before returning it to the pot.
Stir in the dry sherry.
Taste and adjust seasonings as needed. Serve hot with your favorite toppings.
