Ingredients
- All-purpose flour2 cups
- Boiling water1 cup
- Cold water1/2 cup
- bunch Scallions1
- Sesame oil2 tablespoons
- Vegetable oil1/4 cup
- Salt1 teaspoon
- Ground white pepper1/2 teaspoon

In a large bowl, combine the all-purpose flour and boiling water. Stir until a shaggy dough forms.
Add the cold water and continue to mix until the dough comes together. Knead the dough for 5-7 minutes until smooth and elastic.
Cover the dough and let it rest for at least 30 minutes.
While the dough is resting, prepare the scallion mixture. Thinly slice the scallions.
In a small bowl, combine the sliced scallions, sesame oil, salt, and white pepper.
Divide the rested dough into 4 equal portions.
On a lightly floured surface, roll out one portion of dough into a thin circle (about 8-10 inches in diameter).
Brush the dough with vegetable oil and spread a quarter of the scallion mixture evenly over the surface.
Starting from one edge, tightly roll the dough into a log. Then, coil the log into a spiral shape.
Tuck the end of the spiral underneath and gently flatten the coil with your palm.
Roll out the flattened coil into a pancake about 6-8 inches in diameter.
Heat a lightly oiled skillet or griddle over medium heat.
Cook the pancake for 3-4 minutes per side, or until golden brown and crispy. Add more oil to the pan as needed.
Repeat with the remaining dough portions and scallion mixture.
Serve hot and enjoy!
