- Vegetable Broth6 cups
- cup, chopped, plus more for garnish Cilantro1/4
- cup, chopped Parsley1/4
- Lemon Juice2 tablespoons
- Olive Oil2 tablespoons
- Turmeric1 teaspoon
- teaspoon, ground Ginger1
- teaspoon, ground Cumin1
- teaspoon, ground Cinnamon1/2
- (or more to taste) Harissa Paste1/2 teaspoon
- teaspoon, or to taste Salt1/2
- teaspoon, or to taste Black Pepper1/4

Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots and cook until softened, about 5-7 minutes.
Stir in turmeric, ginger, cumin, cinnamon, and harissa paste. Cook for 1 minute more, until fragrant.
Add diced tomatoes (undrained), lentils, vegetable broth, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
Stir in the chickpeas, cilantro, and parsley. Cook for another 5 minutes to heat through.
Stir in lemon juice. Taste and adjust seasonings as needed.
Serve hot, garnished with fresh cilantro.
