  • Vegetable Broth6 cups
  • cup, chopped, plus more for garnish Cilantro1/4
  • cup, chopped Parsley1/4
  • Lemon Juice2 tablespoons
  • Olive Oil2 tablespoons
  • Turmeric1 teaspoon
  • teaspoon, ground Ginger1
  • teaspoon, ground Cumin1
  • teaspoon, ground Cinnamon1/2
  • (or more to taste) Harissa Paste1/2 teaspoon
  • teaspoon, or to taste Salt1/2
  • teaspoon, or to taste Black Pepper1/4

Method

Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots and cook until softened, about 5-7 minutes.
