  • Beef broth4 cups
  • Tomato sauce8 oz
  • Chili powder2 tbsp
  • Cumin1 tbsp
  • Garlic powder1 tsp
  • tsp, dried Oregano1
  • tsp, or to taste Salt1
  • tsp, or to taste Black pepper1/2
  • Vegetable oil2 tbsp
  • All-purpose flour2 tbsp
  • Water1/4 cup

Cut the beef chuck into 1-inch cubes.

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the beef in batches, seasoning with salt and pepper. Remove the beef and set aside.

Add the chopped onion and bell pepper to the pot and cook until softened, about 5-7 minutes.

Stir in the chili powder, cumin, garlic powder, and oregano. Cook for 1 minute more, until fragrant.

Add the diced tomatoes and tomato sauce to the pot. Bring to a simmer, scraping up any browned bits from the bottom of the pot.

Return the beef to the pot. Pour in the beef broth, ensuring the beef is mostly submerged.

Bring the stew to a simmer, then reduce the heat to low, cover, and cook for at least 2-3 hours, or until the beef is very tender. Stir occasionally.

In a small bowl, whisk together the flour and water to create a slurry. Gradually stir the slurry into the stew to thicken the gravy. Simmer for another 15-20 minutes, or until the gravy reaches your desired consistency.

Taste and adjust seasoning as needed. Serve hot with warm tortillas, rice, or your favorite sides.
