  • Mature sourdough starter100 g
  • Bread flour300 g
  • Water220 ml
  • Salt6 g
  • Fleur de sel1 tsp
  • Herbes de Provence2 tsp
  • Olive oil2 tbsp

Method

In a large bowl, combine the sourdough starter, bread flour, and water. Mix until a shaggy dough forms. Let rest for 30 minutes (autolyse).

Add the salt and knead the dough for 8-10 minutes until smooth and elastic. Incorporate the Herbes de Provence during the last few minutes of kneading.

Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 4-6 hours, or until doubled in size. Perform stretch and folds every hour for the first 3 hours.

Gently deflate the dough and turn it out onto a lightly floured surface. Divide the dough in half.

Shape each half into a rough oval. Use a sharp knife or dough scraper to make several diagonal slashes across the dough, creating the leaf shape. Gently stretch the slashes open.

Place the shaped fougasse on a baking sheet lined with parchment paper. Brush with olive oil and sprinkle generously with fleur de sel.

Preheat your oven to 475°F (245°C).

Bake for 15-20 minutes, or until golden brown and cooked through. Rotate the baking sheet halfway through for even baking.
