Everything Bagel Pão de Queijo

Ingredients

  • Sour Cassava Flour (Polvilho Azedo)1 cup
  • Sweet Cassava Flour (Polvilho Doce)1/2 cup
  • Milk1/2 cup
  • Vegetable Oil1/4 cup
  • Eggs2
  • Grated Parmesan Cheese1 cup
  • Salt1 teaspoon
  • Butter, melted2 tablespoons
  • Sesame Seeds1 tablespoon
  • Poppy Seeds1 tablespoon
  • Dried Garlic Flakes1 teaspoon

Method

Preheat oven to 375°F (190°C).

In a saucepan, combine milk, oil, and salt. Bring to a simmer over medium heat.

Remove from heat and immediately add the sour cassava flour and sweet cassava flour. Stir vigorously until a smooth dough forms.

Let the dough cool slightly for about 5 minutes.

Add the eggs one at a time, mixing well after each addition until fully incorporated. The dough will be sticky.

Stir in the grated Parmesan cheese until evenly distributed.

Brush a mini muffin tin with oil or use a non-stick spray.

Fill each muffin cup about 3/4 full with the dough.

Brush the tops of the dough with melted butter.

Sprinkle generously with sesame seeds, poppy seeds, and dried garlic flakes.

Bake for 20-25 minutes, or until golden brown and puffed up.
