Cut the sirloin steak into 1-inch cubes.
In a small bowl, mix the steak cubes with olive oil, salt, and pepper.
Preheat your air fryer to 400°F (200°C).
Place the steak bites in the air fryer basket in a single layer, being careful not to overcrowd. You may need to cook in batches.
Air fry for 6-8 minutes, or until the steak bites are cooked to your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C).
While the steak is cooking, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant, being careful not to burn the garlic.
Once the steak bites are cooked, transfer them to a bowl and pour the garlic butter over them. Toss to coat.
Garnish with fresh parsley, if desired. Serve immediately over rice or with a side salad.
