- Beef chuck roast3 lbs
- Carrots1 lb
- Potatoes2 lbs
- Yellow onion1 large
- Garlic4 cloves
- Beef broth4 cups
- Worcestershire sauce2 tablespoons
- Olive oil2 tablespoons
- Dried thyme1 teaspoon
- Dried rosemary1/2 teaspoon
- Salt1 teaspoon
- Black pepper1/2 teaspoon
- Bay leaf1

Preheat oven to 325°F (160°C).
Season the chuck roast generously with salt and pepper.
Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the roast on all sides until browned.
Remove the roast from the pot and set aside.
Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
Pour in beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pot.
Add thyme, rosemary, and bay leaf to the pot.
Return the roast to the pot. Add carrots and potatoes around the roast.
Bring the liquid to a simmer, then cover the pot and transfer it to the preheated oven.
Bake for 3-4 hours, or until the roast is fork-tender and the vegetables are cooked through.
Remove the pot from the oven and let it rest for 15-20 minutes before shredding the roast and serving with the vegetables and pan juices.
