A hearty and satisfying breakfast bowl inspired by South American flavors, but with a fun American twist! Crispy tater tots form the base, topped with a flavorful hogao-style tomato and onion sauce, creamy avocado, spicy chorizo, and a perfectly cooked sunny-side-up egg. It's comfort food at its finest!

Ingredients
- Tater Tots1 cup
- Chorizo sausage4 oz
- Eggs2 Large
- Avocado1/2
- Roma Tomato1
- Yellow Onion1/4
- Garlic1 clove
- Olive Oil1 tablespoon
- Ground Cumin1/4 teaspoon
- Smoked Paprika1/4 teaspoon
- to taste Salt
- to taste Black Pepper
- to taste Optional: Hot sauce

Preheat oven to 400°F (200°C). Spread tater tots on a baking sheet and bake according to package directions until golden brown and crispy.
While the tots are baking, prepare the hogao-style sauce: Dice the tomato and onion. Mince the garlic.
Heat olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
Add the diced tomato, cumin, smoked paprika, salt, and pepper to the skillet. Cook, stirring occasionally, until the tomatoes have broken down and the sauce has thickened slightly, about 10-15 minutes.
While the sauce simmers, cook the chorizo. Remove the chorizo from its casing (if applicable) and crumble into a separate skillet. Cook over medium heat, breaking it up with a spoon, until browned and cooked through.
Fry the eggs: In a non-stick skillet, cook the eggs sunny-side up to your liking. Season with salt and pepper.
Assemble the cazuela: Divide the crispy tater tots between two bowls. Top with the hogao-style sauce, cooked chorizo, and sliced avocado.
Carefully place a sunny-side-up egg on top of each bowl. Season with hot sauce if desired.
Serve immediately and enjoy!
