  • Active Sourdough Starter or Discard150 g
  • All-Purpose Flour350 g
  • Granulated Sugar75 g
  • Eggs2 Large
  • Unsalted Butter, softened150 g
  • Salt1 tsp
  • 70% Valrhona Dark Chocolate225 g
  • Unsalted Butter, melted (for chocolate filling)3 tbsp
  • Orange Zest1 tsp
  • Water100 ml
  • Granulated Sugar (for simple syrup)50 g
  • Sea Salt Flakes1 pinch

Method

In a large bowl, combine the sourdough starter, flour, sugar, eggs, and salt. Mix until a shaggy dough forms.

Gradually add the softened butter, mixing until fully incorporated and the dough is smooth and elastic. This may take 10-15 minutes.

Cover the bowl and let the dough rise in a warm place for 6-8 hours, or overnight, until doubled in size.

Prepare the chocolate filling: Melt the dark chocolate with the melted butter. Stir in the orange zest.

On a lightly floured surface, roll the dough into a large rectangle, about 12x18 inches.

Spread the chocolate filling evenly over the dough.

Tightly roll the dough into a log, then use a sharp knife to slice the log lengthwise.

Carefully twist the two strands together, with the cut sides facing up, and transfer to a greased and floured loaf pan.

Cover and let rise for another 1-2 hours, or until puffy.

Preheat oven to 350°F (175°C).

Bake for 40-45 minutes, or until golden brown and cooked through.

While the babka is baking, prepare the simple syrup: Combine water and sugar in a saucepan and heat until sugar is dissolved. Simmer for 2 minutes.

Once the babka is out of the oven, immediately brush it generously with the simple syrup.

Sprinkle with sea salt flakes and let cool slightly before slicing and serving.
