Method

1

In a large bowl, whisk together the flour, sugar, cardamom, orange zest, and salt.

2

Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

3

In a separate bowl, whisk together the eggs and milk. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

4

Turn the dough out onto a lightly floured surface and knead gently for a few minutes until smooth.

5

Divide the dough into smaller portions. Roll out each portion to about 1/4-inch thickness.

6

Cut the dough into small squares or rectangles (about 1/2-inch to 1-inch in size).

7

Heat vegetable oil in a deep pot or fryer to 350°F (175°C).

8

Carefully add the chin chin to the hot oil in batches, being careful not to overcrowd the pot. Fry for 3-5 minutes, or until golden brown and crispy.

9

Remove the chin chin with a slotted spoon and place them on a wire rack to drain excess oil.

10

While the chin chin are cooling, prepare the honey-rosewater glaze: In a small saucepan, combine the honey and rosewater. Heat over low heat until the honey is slightly thinned and the mixture is fragrant.

11

Lightly brush the cooled chin chin with the honey-rosewater glaze. Let the glaze set for a few minutes before serving.

12

Enjoy your fragrant and delicious Cardamom-Kissed Chin Chin!
