  • Shrimp, peeled and deveined1/4 lb
  • Dried wood ear mushrooms1/4 oz
  • Carrot, shredded1/2 cup
  • Glass noodles (bean thread noodles)1 oz
  • Yellow onion, finely chopped1/4 cup
  • Garlic, minced2 cloves
  • Egg1
  • Fish sauce2 tablespoons
  • Sugar1 teaspoon
  • Black pepper1/2 teaspoon
  • package Spring roll wrappers (rice paper)1
  • Vegetable oil3 cups
  • Salt1/4 teaspoon

Method

Soak the wood ear mushrooms in warm water for 20 minutes, then finely chop.

Soak the glass noodles in warm water for 10 minutes, then cut into short lengths.

In a large bowl, combine the ground pork, shrimp, wood ear mushrooms, carrot, glass noodles, onion, garlic, egg, fish sauce, sugar, salt and pepper. Mix well.

Lay a spring roll wrapper on a flat surface. Moisten it lightly with water to make it pliable.

Place a spoonful of the filling in the center of the wrapper.

Fold the sides of the wrapper inward, then roll it up tightly from the bottom to the top.

Repeat with the remaining wrappers and filling.

Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).

Fry the spring rolls in batches until golden brown and crispy, about 3-5 minutes per batch.

Remove the spring rolls with a slotted spoon and drain on paper towels.

Serve hot with fresh herbs (mint, cilantro, lettuce) and your favorite Vietnamese dipping sauce (nước chấm).
